Ok we called this a marinade as this is how it started, over time it has been used in almost every cooking format possible, roasting, slow cooking, casserole cooking and even as a sauce!
Greek cuisine, the Meditteranean diet is based on very basic ingredients, one of those, that grow in abundance in Greece are oranges, the reagion of the eastern Peleponesse is extremely famous for it, if you live in Europe you have most likely eaten an orange from the region of Argos or Laconia. We tood all that strong flavour and married it with garlic, honey, wild Greek Thyme and red chilli flakes from Makedonia
