Method

  • Rinse the vegetables well
  • Cut the tomatoes in even sizes and add to a shallow bowl
  • Slice the onions and peppers and scatter, together with the olives over the tomatoes
  • Season with the sea salt and drizzle with the vinegar
  • Add the slab of Feta on top and drizzle with the olive oil
  • Lastly sprinkle all over with the dried oregano

  • Make sure your vegetables are in season, organic and from a vendor you know has Great ingredients! Don't be cheap, flavour is everything!
