MEDI Bowl

Ingredients

  • 2 cups of lentils (which ever ones you like we used green lentils)
  • 1 cup medium sliced carrots
  • 100gr asparagus
  • 100gr Feta D.O.P cheese
  • 70gr GAEA tomato, pepper and onion crispy bites
  • 1 orange pepper cut in squares or very thin slices
  • 1 cup rough chopped Coriander

For The Dressing

Method

  • Boil the lentils according to the packaging, rinse and set aside to cool
  • In the meantime, grill, roast or air fry the carrot slices and asparagus with just a drizzle of GAEA Extra virgin olive oil
  • Mix the dressing ingredients and set aside in a small bowl
  • Assemble your Medi Bowl with the lentils as a base and all other ingredients sectioned around it

Tip

Add the dressing and combine or leave on the side to dip your fork in!
