This amazing purple salad is not only tasty but it's vibrant and filling, due to the purple cabbage. Just drizzle it with olive oil and sprinkle it with GAEA Green Olympian olives!

INGREDIENTS
- 1 jar GAEA Green Olympian olives in brine
- 2 cups fine cut purple cabbage
- 1/2 cup cut purple grapes
- 3 purple carrots
- 1/2 cup GAEA Sitia Extra Virgin Olive Oil
METHOD
- Peel and slice the carrots in half
- Place in a hot pan with a couple of tablespoons of the olive oil and slightly blanche for 5 minutes.
- In a bowl arrange the cabbage, carrots and grapes.
- Evenly Sprinkle the GAEA Green Olympian olives in brine.
- Drizzle with the GAEA Sitia Extra Virgin Olive Oil
